Cowboy Caviar... but Make It Pasta Salad

8 oz small shell pasta

dressing

¼ cup oil

2 tsp chili powder

1 large garlic clove minced

1/8th tsp salt

3 tbsp lemon juice (half large lemon)

2 tbsp honey (optional)

Salad

1 bell pepper

4 green onions

½ chilli pepper

1 (15 oz) can black beans rinsed

2 ears of corn or 2 cups of canned or frozen corn

1 ½ cups grape tomatoes

1/3 cup cilantro or parsley

Cook the pasta in boiling water just until “al dente”.  Drain and rinse with cold water and add to large bowl.

In a small bowl add the oil, chili powder, garlic, salt and lemon juice.

Dice the bell pepper, green onions and chili pepper. Slice tomatoes in half. Chop cilantro.

Shave off the corn niblets from 3 cobs or use canned or frozen.  In a small skillet saute corn just until slightly charred about 3 minutes.

Add tomatoes, bell peppers, black beans, green onions, chili pepper, corn and dressing to the pasta, mix well. Taste test and adjust for seasoning. Enjoy!
