2 potatoes (any kind washed, peeled if sweet)
3 full carrots or 2 handfuls of baby carrots
1 onion
Olive oil to drizzle
Dried seasonings (garlic, Italian blend, etc.)
Salt
Black pepper
Optional Veggies
1 zucchini/summer squash
2 bell peppers
1 fennel bulb
1 small egg plant
1 head of broccoli
1-2 handfuls of green beans
Brussel sprouts

1) Set the oven to 450°F and prepare a baking sheet with either a silicon baking mat or parchment paper
2) Chop veggies to bite sized pieces but keep each vegetable separate
3) Place starchy/hardy veggies (carrots, potatoes, onion) on the prepped baking sheet first these take longer to cook than, say, zucchini
4) Drizzle olive oil on the baking sheet veggies and seasoning of choice (I usually go salt, black pepper, and garlic powder)
5) Bake for 10 minutes
6) Pull from the oven and test how tender the veggies are by stabbing with a fork. If you can't stab them, place back in the oven for 5 minutes. If you can stab them, but are still under cooked, add the other optional veggies to the baking sheet
7) Drizzle oil on and season the newly added veggies
8) Bake for another 10 minutes.
9) Remove and stab hearty veggies for softness. If you can stab them all the way thru with relative ease, they're done! Other veggies should be brightly colored while being a golden brown on the edges
