Overnight Bread Rolls

410g flour (3⅓ cups)

308g water (1 cup + 5 tbsp)

1 tsp yeast

1 tsp salt

Mix yeast with water, then add flour and mix. Sprinkle salt and coil fold multiple times until the dough feels smooth.

Cover and put it in the fridge until the next day.

The next day, let the dough sit at room temperature about 30–45 minutes.

On a floured surface, put your dough then fold it from the sides like shown in the video. Turn it, then divide it into 6 pieces.

Take each piece and close it very well, then place them on baking paper. Sprinkle some flour on top and cover for 20 minutes.

Score them and lightly brush with water.

Bake at 480°F (250°C) with steam for 10 minutes, then reduce heat to 385°F (195°C) and bake 20 minutes more until golden.
