Peanut Chilli Lime Rice Noodles

3 tbsp peanut butter

2 tbsp soy sauce

2 tbsp chili oil

2 tsp sugar

1 tsp vinegar

1 tbsp fresh lemon juice.

Boil flat rice noodles till just soft.

In a bowl, whisk: 3 tbsp peanut butter + 2 tbsp soy sauce + 2 tbsp chili oil + 2 tsp sugar + 1 tsp vinegar + 1 tbsp fresh lemon juice.

Add very thinly diced spring onion + 1tsp of chili flakes or chili powder.

Mix in 2 tbsp of the hot noodle water to loosen the sauce.

Toss the noodles in this sauce really well.

Top with more spring onion and a sprinkle of white sesame seeds.
