Ingredients

Chicken:

• 24 oz chicken breast • Juice of 1 lemon • 1 tablespoon olive oil • 1 tablespoon salt • ½ tablespoon pepper • 1 teaspoon garlic powder

Sauce:

• 180 g fat-free evaporated milk • 80 g Parmigiano Reggiano • Juice of ½ lemon • Pepper to taste (Reserve the other half of lemon for deglazing the pan after cooking the chicken.)

Rice: • 320 g basmati rice • 30 g butter • 480 g water

Instructions

1. Cook the rice: Bring 480 g water to a boil, add 30 g butter and 320 g basmati rice. Cover, reduce heat to low, and cook for 15 minutes. Remove from heat and keep covered for 10 more minutes.

2. Cook the chicken: Season the chicken breast with olive oil, lemon juice, salt, pepper, and garlic powder. Sear in a hot pan until golden brown and cooked through. Deglaze the pan with the reserved half lemon juice.

3. Make the sauce: In a small saucepan, combine evaporated milk, Parmigiano Reggiano, lemon juice, and pepper. Heat gently until the cheese melts and sauce thickens.

4. Assemble: Slice the cooked chicken and serve over rice. Pour creamy lemon Parmesan sauce on top.

5. Meal prep option: Split into 5 equal servings, top with sauce, and store in the freezer until ready to eat.
