Maple Roasted Rutabaga

1 1/2 lbs rutabaga, peeled, cut into 1" cubes

1 small red onion in wedges

3 slices bacon

3 tbsp maple syrup

3 tsp chopped fresh rosemary, divided

Prep time: 10 min

Cook time: 40 min

Preheat oven to 400.

Coat a 9" x 13" pan with cooking spray.

In a large bowl mix rutabaga, onion, bacon, syrup and 2 tsp rosemary: toss to coat. Spread in pan, season with salt & freshly ground pepper.

Roast 40-50 minutes until tender, stirring occasionally. Sprinkle with remaining rosemary & serve.
