2oz indigo gin

1oz cucumber juice

3/4oz simple syrup

1oz ginger beer

In a cocktail shaker, combine gin, cucumber juice and simple syrup. I was able to find fresh cucumber juice at the market, but feel free to muddle a handful of cucumber chunks! Add ice and shake. Strain into a chilled coupe glass and garnish with a cucumber peel.
