Apricot Frangipane Galette

80g ground almonds

80g icing sugar

80g butter, soft

1 tbsp plain flour

1 tsp vanilla extract

1 tsp almond extract

Pinch sea salt

1 egg

6 apricots

1 portion of premade all butter puff pastry

1 small egg

A handful flaked almonds

2 tbsp apricot jam

Heat the oven to 190c

Beat together the frangipane ingredients, place in the fridge and leave to rest for a good 30 minutes.

Cut the apricots in half and remove the stones then half and half again, so cut into nice little wedges.

Roll out the pastry, dollop on the frangipane and spread over the middle leaving a good inch all the way around. Fold up the edges to create the galette.

Whisk the egg and paint over the edges of the pastry using a pastry brush. Scatter flaked almonds over the edges and place in the oven for a good 40 minutes till puffed up and golden.

Place the apricot jam in a small pan and heat till it melts. Using a pastry brush paint the over the apricot part of the tart with the jam. Serve with whipped cream or a good scoop of vanilla ice cream.
