One Pan Broccoli Cheddar Pasta

재료

2 tbsp olive or avocado oil

1/4 c yellow onion, finely chopped

3 cloves garlic, minced

2 c chicken broth

1 1/4 c milk or half & half

8oz box pasta, I used @eatbanza

3 c raw broccoli florets, cut in half (to make even, smaller pieces)

1/4 tsp of each: dried thyme, ground mustard, salt & pepper

2 c cheddar cheese, freshly shredded from a block - it melts easier & better quality!

Toppings: parmesan, chili flakes, grilled chicken/another protein of choice

In a large skillet over medium heat, heat oil until shimmering. Sauté the onion for 3-4 minutes until softened, add garlic & cook 1 minute until fragrant.

Add the chicken broth, half & half then bring to a boil & add pasta. Submerge the pasta into the liquid and let it return to a low boil - cook pasta slightly covered according to package instructions. Tip: run a wooden spoon/spatula along the bottom of pan occasionally to prevent the pasta from sticking to it!

Add the broccoli & seasonings during the last 5 minutes of pasta cooking, cover until everything is cooked to your desired donesness!

Remove from heat. Add cheddar cheese & mix until fully melted, coating all the pasta/broccoli. Taste & adjust any seasonings, serve in bowls garnished with extra cheese, chili flakes, or choice of protein. ENJOY 😍
