Kickass Southwest Chicken Salad

FOR THE CHICKEN

1 lb chicken breast (454g)

1 tsp paprika

1 tsp garlic powder

1/2 tsp salt

1/2 tsp black pepper

FOR THE SALAD

1/4 red onion, diced

1 1/2 cups black beans

2 cups kale, chopped

1 cup cherry tomatoes, halved

1/4 cup cilantro, chopped

2 avocados, diced

1 1/2 cups corn

KICKASS ADOBO SAUCE

1/2 cup nonfat greek yogurt

1/2 cup 2% cottage cheese

2 tbsp lime juice

1 garlic clove

1 tsp smoked paprika

1/4 tsp chili powder

pinch of cayenne

pinch of cumin

pinch of salt & pepper

Season chicken with paprika, garlic powder, salt, and pepper. Sear in a lightly oiled skillet over medium-high, 3–4 minutes per side, until cooked through. Rest, then dice.

Rinse and drain black beans. Dice onion, chop kale, halve tomatoes, dice avocados, and chop cilantro. Drain corn if canned.

Blend greek yogurt, cottage cheese, garlic, lime juice, and spices until smooth. Thin with water to desired consistency.

In a large bowl, combine chicken, beans, kale, tomatoes, avocado, corn, onion, and cilantro. Add sauce and toss to coat.

Taste and adjust salt and lime. Garnish with extra cilantro and serve.
