Smoked Salmon, Soft Eggs, Cucumber and Miso Dressing (gf)

200 grams sliced smoked salmon
3 soft-boiled eggs
few dil sprigs
PICKLED CUCUMBER
2 tablespoons white wine or apple cider vinegar
1 teaspoon caster Sugar
1/2 teaspoon sea salt
1 small cucumber, shaved into long ribbons and core discarded
MISO DRESSING
3 tablespoons white
miso paste
2 tablespoons mirin
1 tablespoon each tamari, rice
wine vinegar and extra virgin olive oil
1 teaspoon each broWn sugar and Dijon mustard

cUCU MBER: Put the vinegar, sugar and salt in a medium glass bowl and whisk to dissolve the sugar. Add the cucumber and turn to coat. Set aside for 10 minutes, stirring occasionally.
MISO DRESSING: Blitz all the ingredients with a stick blender until smooth.
TO SERVE: Divide the salmon between
two plates. Drain the cucumber and arrange alongside the salmon then
garnish with dill. Add three egg halves
to each plate and drizzle with a little of the dressing. Serve the remaining dressing separately.
