225g plain flour

1 tbsp baking powder

75g Demerara sugar

1 egg

150mI milk

40mI sunflower oil

1 tsp vanilla essence

160g blueberries

1 Preheat the oven to 190C/170C fan/gas mark 5 and line a 12-hole muffin tin with paper cases.

2 Sieve the flour and baking powder together into a bowl, then stir in the sugar.

3 Whisk the egg, milk, oil and vanilla together in a jug. Pour into the dry ingredients and mix gently. Fold in the blueberries.

4 Use an ice cream scoop or spoon to divide the batter evenly amongst the cake cases. Bake for 15-20 minutes until golden and risen. Remove the muffins from the tin and allow to cool on a wire rack.
