Tahini Chicken & Roasted Vegetables

๐Ÿ“ Recipe (4 servings):

Main Ingredients:

๐Ÿ  3 Medium sweet potato

๐Ÿ— 1 lb Chicken thighs

๐Ÿง€ 1/2 cup Ricotta salata (crumbled or diced)

๐Ÿง€ 1/2 cup Soft goat cheese (in small dollops)

๐ŸŒฐ 8.5 oz Chickpeas (drained)

๐Ÿฅฆ 2 1/2 cups Broccoli

๐Ÿง… 1 Red onion

๐Ÿซ’ 1 tsp Olive Oil

๐Ÿง‚ Salt, garlic granules, mixed herbs, pepper

๐Ÿฅฃ Dressing:

๐Ÿฆ 1/2 cup Low-fat Greek yoghurt

๐Ÿฅ„ 2 tsp Tahini

๐ŸŒถ 1 Tbsp Cumin

๐Ÿ‹ Juice of 1 lemon

๐Ÿง‚ Pinch of salt

๐Ÿ’ง 3 tbsp + 1 tsp Water (to thin)

Add sweet potato, broccoli, onion, chickpeas, ricotta salata, and seasonings to a baking tray. Drizzle with olive oil.

Roast in a preheated oven at 200ยฐC (392ยฐF) for 30 minutes. Then add the chicken and soft goat cheese (in small dollops across the tray) and roast for another 20โ€“25 minutes or until chicken is cooked through and golden.

While baking, mix the yoghurt, tahini, cumin, lemon juice, salt, and water into a smooth dressing.

Drizzle dressing over the tray bake, serve, and enjoy!
