Tahini Chicken & Roasted Vegetables

๐ Recipe (4 servings):
Main Ingredients:
๐ 3 Medium sweet potato
๐ 1 lb Chicken thighs
๐ง 1/2 cup Ricotta salata (crumbled or diced)
๐ง 1/2 cup Soft goat cheese (in small dollops)
๐ฐ 8.5 oz Chickpeas (drained)
๐ฅฆ 2 1/2 cups Broccoli
๐ง 1 Red onion
๐ซ 1 tsp Olive Oil
๐ง Salt, garlic granules, mixed herbs, pepper
๐ฅฃ Dressing:
๐ฆ 1/2 cup Low-fat Greek yoghurt
๐ฅ 2 tsp Tahini
๐ถ 1 Tbsp Cumin
๐ Juice of 1 lemon
๐ง Pinch of salt
๐ง 3 tbsp + 1 tsp Water (to thin)

Add sweet potato, broccoli, onion, chickpeas, ricotta salata, and seasonings to a baking tray. Drizzle with olive oil.
Roast in a preheated oven at 200ยฐC (392ยฐF) for 30 minutes. Then add the chicken and soft goat cheese (in small dollops across the tray) and roast for another 20โ25 minutes or until chicken is cooked through and golden.
While baking, mix the yoghurt, tahini, cumin, lemon juice, salt, and water into a smooth dressing.
Drizzle dressing over the tray bake, serve, and enjoy!
