Ingredients

• ½ cup avocado oil

• ½ cup orange juice

• ¼ cup lime juice

• 1 serrano chile, stem and seeds removed, finely chopped

• 3-5 cloves garlic, chopped

• 1 ½ teaspoons ground cumin

• ½ teaspoon ancho chile powder

• 1 teaspoon kosher salt

• ½ teaspoon black pepper

• ½ cup fresh cilantro, stems and leaves finely chopped

• 1.5 pounds flank, sirloin, or skirt steak

Instructions

1. In a medium bowl, combine the avocado oil, citrus juices, chile, garlic, spices, and cilantro. Whisk well.

2. Place steak in a shallow baking dish, and pour marinade over the top, turning the meat until well-coated. Cover and refrigerate for 2-3 hours. Alternatively, use a large Ziploc bag; lay flat to refrigerate, flipping halfway through.

3. Remove steak from fridge and let it come to room temperature.

4. Heat a large cast-iron skillet or grill pan over high heat. Add a light coating of canola or olive oil to the pan. Sear for 3–4 minutes per side without moving it — you want a good crust to form.

5. Remove steak from marinade, shake off excess, and sear 3-4 minutes per side. Aim for medium-rare (135°F internal temp).

6. Let steak rest 10-15 minutes on a clean cutting board.

7. Slice thinly across the grain and serve immediately.
