Ingredients: this makes 4 meals

1 ½ Boneless skinless chicken thighs (seasonings: 1/2 tbsp cumin, 1/2 tbsp onion powder, 1 tsp all spice, 2 tsp turmeric, 1 tsp salt, 1 tsp pepper, 1/2 tbsp olive oil, 1/2 tbsp minced garlic, the juice of 1/2 a lemon, 2 tsp better than bullion)

1 tbsp butter

1/2 yellow onion (chopped)

1 tbsp turmeric

2 tsp garlic powder

1 tsp pepper

1 cup jasmine rice (dry)

2 cups water

1/2 a red onion (sliced)

1/2 a cucumber

24 cherry tomatoes

Salt & pepper to taste

The juice of half a lemon

The sauce:

1/2 cup non fat plain greek yogurt

1/2 tbsp minced garlic

1 tbsp parsley

1 tsp salt

1 tsp pepper

The juice of half a lemon

1/2 tbsp olive oil

Chicken: Bring a pan to med/high heat - 5 mins each side - internal temperature should be 165°

Rice: Bring pan down to low heat & let it simmer for 15-20 mins (check at 15)
