One Pan Marry Me Lentils

1/2 cup sun-dried tomatoes in oil
4 garlic cloves minced
1 cup yellow onion finely diced
1 tbsp Italian seasoning
1 1/2 tbsp tomato paste
1½ cups red lentils
1 tbsp gf tamari
2 1/2 cups vegetable broth
1 15oz can full-fat coconut milk
3 tbsp nutritional yeast
1 tsp sea salt
1/2 tsp ground black pepper
2 cups baby spinach
1 tbsp lemon juice
parsley for garnish

Heat a large skillet over medium heat and add the sundried tomatoes with oil included. Add in the garlic and onion and sauté for 2-3 minutes until fragrant.
Add the Italian seasoning and tomato paste, and stir for about 30 seconds to caramelize the tomato paste.
Add the lentils, tamari, vegetable broth, coconut milk, and nutritional yeast and stir to combine. Increase heat to bring to a boil, and then reduce heat so it’s at a gentle simmer. Cover and cook, stirring occasionally, for 15 - 20 minutes until the lentils have softened.
Stir in the lemon juice and spinach. Cook just until spinach is wilted. Top with chopped parsley right before serving.
