Spanish Tuna Salad

Ingredients (serves 2): • 4 cups mixed greens • 1 ripe avocado, diced • 1 cup cherry or dark tomatoes, halved or chopped • ½ cup corn, drained • 1 can no-salt tuna, flaked • Roasted red peppers

Optional: hard-boiled egg slices, red onion, olives

Instructions:

1. Layer greens in a bowl or on a large plate.

2. Top with tuna, avocado, tomatoes, and corn.

3. Drizzle the vinaigrette generously over everything.

4. Gently toss just before serving, or leave layered for a prettier presentation.

5. Optional: Add sliced egg, olives, or thin red onion if you want to ' ulk it up.
