8-10 apples (a mix of sweet and tart)

1 orange, sliced

3 cinnamon sticks

1 tablespoon whole cloves

1 tablespoon allspice berries

½ cup brown sugar, maple syrup, or honey (or to taste)

Water to cover

Roughly chop the apples and add everything to a large pot. Fill with water until just covered, then bring to a boil. Reduce to a simmer and cook for about 2 hours. Mash the apples with a spoon, then simmer another 30 minutes. Strain through a fine mesh sieve or cheesecloth, and serve warm.
