Overnight Granola

This recipe is extremely forgiving. You can sub out the nuts for seeds and change it up however you like. The most important thing is that the maple syrup to oil ratio stays the same. Personalize it by adding a handful chia, flax, or even hemp seeds.
Recipe for two pans:
370g old fashioned rolled oats
175g slivered almonds
135g shelled unsalted pistachios
50g shredded coconut or coconut chips
1 tsp cinnamon
1/2 tsp cardamom
1 tsp table salt
435g maple syrup
110g Olive oil (Sub avocado/coconut/etc)
120g dried cherries (or any dried fruit)

Preheat an oven to 180C or 160C for fan/convection oven.
Line two baking trays with parchment paper.
Mix all ingredients together EXCEPT cranberries/dried fruit.
Distribute evenly among 2 trays.
Bake for 15 minutes.
Be fast! Take pans out and mix granola together. This step ensures even browning. Return to the oven and close the door. Do not lose any heat from the oven!
Turn OFF the oven and let granola sit in the leftover heat in the oven overnight (6-8 hours). This step will ensure Maillard reactions and dehydration take place while you sleep.
In the morning, break up granola and add cranberries/dried fruit. Mix to combine.
My favorite way to eat it is with milk or yogurt and frozen fruit. Good luck making it last the whole week😁
