Ingredients (Serves 2):
2 x spring Onion (1 for base, 1 to garnish)
Tsp x Ginger Paste
Tbsp x Tomato Puree
Tbsp x Curry Powder
Tbsp x Mango Chutney
1 x Large Garlic Clove
1 x Tin Coconut Milk
6 x Cherry Tomatoes
Tenderstem Broccoli, Carrot & Fine Beans
Soy Sauce
Gyoza of Choice (Today we used Veggie!)
Coriander & Crushed Chili Oil to Garnish

Cook rice
Heat oil in a frying pan. Add grated ginger, tomato puree, curry powder, chopped garlic and spring onion. Cook on a high heat for 1 min.
Add coconut milk and tbsp mango chutney. Mix. Add carrot, beans, broccoli and cherry tomatoes. Cover and cook for a few mins.
Then add a glug of light soy sauce or a dash of dark soy sauce. Add gyozas cover and cook for a few mins.
Garnish with spring onions, coriander and chillie.
