One Pan Ditalini Carbonara

6 slices bacon chopped

1½ cups ditalini

1-2 cups water

Salt to taste

3 egg yolks

2-3 tablespoons pecorino Romano

Black pepper

Freshly grated Parmesan

手順

Cook the bacon in a large skillet until crisp and remove with a slotted spoon. Beat the yolks with the pecorino and black pepper. Pour 2 tablespoons of bacon grease into the egg mixture and stir until smooth. There should still be a few tablespoons of bacon grease into the skillet. Add the pasta to it along with 1c of water. Bring to a boil and reduce heat and cover for five minutes. Uncover and add water as needed until the pasta is tender and season with salt. When the pasta is tender, remove from heat and add the bacon. Stir to combine and add the egg mixture stirring quickly until creamy. Top with freshly grated Parmesan.
