Hollandaise Sauce

1 lb butter, cut into cubes
7 egg yolks
Juice from ½ of a lemon
Salt and pepper to taste

In a double boiler, add yolks and half the butter and all the lemon juice. Continue to stir until butter is melted.A
Add the remaining butter and stir until dissolved. Add salt and pepper to taste. Adjust as needed with salt pepper and lemon juice.

Periodically remove sauce from heat while stirring. DO NOT OVERHEAT
