1/4 cup extra-virgin olive oil
2 green onions (finely chopped)
teaspoons white wine vinegar
2 teaspoons honey
1/4 teaspoon sumac
1/2 teaspoon kosher salt
1 large English cucumber, (thinly sliced)
12 radishes, (thinly sliced)
125g feta (crumbled)
1/4 cup Pepita (roasted)
1 can of kidney beans (optional)
1/4 cup minced dill (optional)
3 tablespoons chopped mint (optional)

Make the dressing: In a salad bowl, combine olive oil, green onion, white wine vinegar, honey, sumac and kosher salt.
Make the salad: Combine cucumber and radishes in the bowl with the dressing. For a full meal, add the kidney beans. Toss to combine. Top with crumbled feta, roasted pepitas, freshly cracked pepper, and a sprinkle of salt. Serve immediately.
