High-Protein Greek Halloumi Bowl

材料

For the bowl:

1 cup uncooked jasmine or basmati rice (yields ~3 cups cooked)

8 oz halloumi cheese, sliced into thick strips

1 tbsp olive oil

1 lemon, cut into wedges

2 pita breads, cut into quarters

For the Greek salad:

1 cucumber, sliced

1 cup cherry tomatoes, halved

1/4 red onion, thinly sliced

1/3 cup feta cheese, crumbled

1 tbsp olive oil

1 tbsp red wine vinegar

1/2 tsp dried oregano

Salt & pepper

For Tzatziki:

1 cup plain non-fat Greek yoghurt

1/2 cucumber, grated and squeezed dry

2 cloves garlic, minced

1 tbsp lemon juice

1 tbsp fresh dill

Salt & pepper

For garnish:

1/2 cup Kalamata olives

Extra crumbled feta (optional)

  1. Rinse rice and cook according to package directions. Fluff with a fork and set aside

  2. In a bowl, combine cucumber, tomatoes, red onion, and feta. Drizzle with olive oil m, red wine vinegar, oregano, salt, and pepper. Chill until ready to serve.

  3. Heat a skillet over medium-high heat with olive oil. Grill halloumi slices for 1-2 minutes per side until golden and crisp

  4. Add rice as the base, top with grilled halloumi, Greek salad, a scoop of tzatziki, olives, and a lemon wedge
