French Onion Skillet Chicken Thighs

8 chicken thighs (900g)

2 tbsp olive oil

2 tbsp unsalted butter

3 large yellow onions, thinly sliced

2 cloves garlic, minced

1 cup beef broth

1 tsp balsamic vinegar

1 tsp fresh thyme leaves or 1/2 tsp dried thyme

1/2 tsp salt

1/4 tsp black pepper

1 1/2 cups shredded Gruyère cheese

2 tbsp fresh parsley, chopped

  1. Set oven to 190°C

  2. Pat thighs dry and season with salt and pepper. Heat olive oil in a cast iron skillet over medium-high heat. Sear thighs 3-4 minutes per side until golden brown. Transfer to a plate

  3. In the same skillet, melt butter. Add sliced onions and cook 20 minutes over medium-low, stirring occasionally, until golden and caramelised. Add garlic in the last 2 minutes.

  4. Pour in beef broth, balsamic vinegar, and thyme. Stir and simmer 3-4 minutes to reduce slightly

  5. Return chicken thighs to skillet, nestling them into the onion mixture. Spoon onions over the thighs

  6. Sprinkle Gruyère evenly over chicken. Transfer skillet to oven and bake 12-15 minutes, until thighs reach 80°C internal temperature and cheese is melted.

  7. Garnish with parsley and serve hot
