Hainanese Chicken Rice in the Rice Cooker

ingredients (serves 2):
2 boneless chicken thighs
1 tbsp salt
2 cups white rice, washed
1 1/2 cup chicken broth
1 cup water
1 tbsp ginger, minced
1 tbsp garlic, minced
1 tbsp rendered chicken fat (or substitute with vegetable oil)
1 whole scallion, halved
ginger scallion oil:
2 tbsp ginger, finely minced
1 stalk scallion, finely minced
1 tablespoons oil
pinch of salt
sweet dark soy sauce:
2 tbsps light soy sauce
1 tbsp dark soy sauce
1 tbsp brown sugar
1 tsp sesame oil

rinse the chicken thighs thoroughly and pat dry. rub 1 tbsp salt all over the chicken thighs and cut off the excess chicken fat
in a small pan, heat the rendered chicken fat (or vegetable oil) over medium heat. then add the minced garlic and ginger. sauté for about 30 seconds, until fragrant.
add 2 cups of rice to the rice cooker and wash for 3 times. pour the chicken broth, water, amount should be a little bit more than the surface of the rice.
place the chicken thighs on top of the rice. add the garlic, ginger and chicken fat oil from the pan. then add scallion, close the lid and press the “Cook” button.
5.once the rice is cooked, let the chicken and rice rest for 10 minutes before serving.
6.Combine all the ingredients for the dipping sauce, arrange the chicken on a plate, serve with the cooked rice and enjoy!
