Parmesan Gnocchi Soup

1 lb Italian Sausage (spicy is good)
1 yellow onion
6oz bag of spinach
1-2 tbsp minced garlic
2 cups chicken broth
2 cups heavy cream
3 oz grated parmesan cheese
1 tsp salt, pepper, Italian seasoning, oregano, parsley, garlic powder, onion powder, crushed red pepper
1 package gnocchi
1 tbsp tomato paste

1. In a large pot (Dutch oven), drizzle olive oil and add onion and garlic. After about a minute or two, add in the Italian sausage and cook until brown.
2. Once the meat is cooked, add all the seasonings, tomato paste, and chicken broth.
3. Raise the heat, and once the broth is boiling, add the gnocchi and bring it down to a simmer. Let simmer for about 10 minutes.
4. Add the Heavy cream and stir until combined. Once the soup is warm again, add the parmesan and stir until combined.
5. Finally, add the spinach and cook until wilted. Serve hot.
