Curry Sausages

1kg beef or pork sausages
1 large brown onion, sliced
2 cloves (or 1 tsp jarred) garlic
2 medium carrots, sliced
1 cup frozen peas
2 tbsp curry powder (keens or home brand)
1 tbsp plain flour
2 cups (500ml) beef stock - cube or liquid stock
2 tbsp tomato sauce
1 tbsp Worcestershire sauce
1 tbsp olive oil or butter
Optional: 1/2 cup milk or cream (for creamier sauce)
2 cups white rice

Cook the sausages
Bring a pot of water to boil and simmer sausages for 5 minutes to firm them up
Drain, slice into chunks (about 3cm pieces), and set aside
Tip: boiling first helps remove excess fat and keeps the curry sauce smooth
Make the curry base
In a large pan or pot, heat 1 tbsp oil or butter over medium heat
Add sliced onion and cook for 2-3 mins until soft
Add garlic, curry powder, and flour; stir for 30 seconds (it will form a paste)
Add liquids and veggies
Gradually pour in 2 cups beef stock? Stirring to remove lumps
Add tomato sauce, Worcestershire sauce, carrots, and sausage pieces
Bring to a gentle simmer and cook for 25 minutes until thickened and carrots are tender
Finish and serve
Stir in peas and milk / cream (optional)
Simmer another 3-5 minutes until heated through
Serve hot over cooked rice, mashed potato, or steamed veggies

Fridge: keeps 4-5 days in a sealed container
Freezer: freeze for up to 2 months
Reheat in microwave or saucepan until steaming hot
