Japanese Pork Steak (Tonteki)

8 oz Pork loin or butt fillets (cut into 4 oz fillets
Salt & pepper, potato starch
Garlic
Cabbages
Sauce Ingredients]
1 tbsp soy sauce
2 tbsp worcestshire sauce
1 tbsp sake
1 tbsp ketchup
1/2 tbsp oyster sauce
1/2 tbsp sugar
1 clove grated garlic
1/4 grated onions

Cut the pork into a glove-like shape.
Cover both sides with salt & pepper, potato starch.
Mix the sauce ingredients above.
Add oil & sliced garlic into a pan, simmer in low heat, take out garlic.
Spread the oil, then add the pork.
Sear one side without moving it, until lightly seared when you flip it over.
Lower heat, then pour the sauce.
Simmer for about 5 minutes, occasionally scooping sauce on top.
Serve with cabbages and garlic chips from before, pour more sauce.
