1 (7-ounce) can chipotles in adobo sauce, sauce reserved

1 (14.5-ounce) can diced tomatoes

5 garlic cloves

¼ cup fresh lime juice (from about 2 medium limes)

1 cup packed fresh cilantro leaves

½ cup chopped red onion

1 teaspoon kosher salt

½ jalapeño, seeded

In a blender, combine 1 chipotle pepper and 1 teaspoon adobo sauce from the can. Add the remaining ingredients and puree for 1 minute until smooth. Refrigerate in an airtight container until ready to use, up to 5 days.
