The Easiest Potato Recipe Ever!

3 pounds small Yellow or Red Potatoes
¼ cup Garlic Olive Oil
1 tablespoon Garlic, minced
1 teaspoon Fresh Thyme, chopped (optional)
1 teaspoon Fresh Rosemary, chopped (optional)
1 tablespoon Fresh Parsley, chopped
Salt and Black Pepper to taste
1 Egg Yolk
1 ½ tablespoons Dijon Mustard
1 clove Garlic, minced
¾ cup Herbs de Provence Olive Oil
1 or 2 tablespoons Harissa (optional for spice)

Prepare the Potatoes:
Start by cutting the potatoes in half or bite size if they are too large. Place the potatoes in a pot of cold water with a pinch of salt and bring to a boil. Cook until the potatoes are tender but not mushy. Drain and let them cool on a cookie sheet to prevent them from becoming soggy.
Preheat Oven to 350°F (175°C)
In a bowl, large enough to add the potatoes, mix olive oil, garlic, thyme, rosemary, parsley, salt, and pepper. Toss the cooled potatoes in the mixture.
Spread the potatoes on a baking sheet and bake for 10 minutes until fragrant.
Makes about 1 cup
In a bowl whisk together, Dijon mustard, egg, garlic, and very, very slowly add olive oil until smooth. When you have the consistency of mayonnaise, add Harissa if you want a spicy kick.
Serve the potatoes warm with the aioli on the side. Enjoy!
