Aubergine Butter Beans

1 aubergine, sliced into 1/4 inch cubes
2 garlic cloves, finely chopped
2.5 tbsp harissa
1 400g can chopped tomatoes
1 400g can butter beans, drained
2 tbsp capers
Oil, salt
Topping: yoghurt, chopped coriander/parsley

Cook the aubergine
In a large frying pan over a high heat, add 1-2 of oil then the aubergine. Cook until softened, about 5 minutes. Stir frequently.
Add the garlic and cook for 2 minutes. Stir regularly
Add the harissa, chopped tomatoes, capers and butter beans. Simmer for 5 minutes. Top with yoghurt and chopped coriander (or parsley). Enjoy!
