Healthy Apple Pancakes

1 cup old fashioned oats (ground) or oat [try with almond flour] flour 82 g

3 large eggs

1 cup plain Greek yogurt (chobani) 225 g/8 oz

8 oz apple (1 large) 225 g

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp salt

½ lemon zest (optional)

Prepare dry ingredients by grinding oats in a food processor. Alternatively, you can buy oat flour. Add baking powder.

Prepare wet ingredients. In a large bowl, crack 2 eggs and add 3 table spoons of egg whites.

Add sugar free vanilla yogurt, lemon zest and vanilla extract. Mix well.

Add dry ingredients to wet ingredients and mix until combined.

Grate one large apple (about 9 ounces)

Mix all ingredients

Preheat a large non stick pan on a medium high heat. Make sure the heat is not to high - the pancakes can burn quickly when the heat is too high.

There is no need to use any butter or oil - they won't stick to a non stick pan (unless it is scratched or burnt).

Apply pancake batter to a heated pan. It takes about 2 - 3 minutes per side. When you start seeing that the edges start setting and little bubbles form on top of the pancakes, they are ready to be flipped.
