Chicken Gyro Bowl

Chicken-
2 lb chicken breast
2 tsp dried oregano
3/4 tsp smoked paprika
3/4 tsp ground cumin
3/4 tsp ground coriander
1 1/2 tsp salt
3/4 tsp black pepper
Tzatziki sauce-
1/2 large english cucumber
1 1/2 tsp salt
2 cups greek yogurt
2 tbsp lemon juice
2 cloves garlic, minced
1 tbsp fresh dill, minced
Other ingredients-
Cucumber
Red onion
Kalamata olives
Grape tomatoes
Feta cheese

Chicken-
Cut chicken into 1/2 inch pieces
Toss with spices until well coated then air-fry at 400F x15 minutes
Tzatziki sauce-
Slice the cucumber in half lengthwise, remove the seeds and grate the cucumber then toss it with salt in a bowl
Set the salted grated cucumber in a strainer over the bowl and let stand x15 minutes then squeeze to remove as much liquid as possible
Add the drained grated cucumber and remaining ingredients to a large bowl and mix to combine
Assemble your bowl with rice, cucumber, red onion, Kalamata olives, crumbled feta cheese, grape tomatoes, chicken and tzatziki sauce.
