Delicious Indian fusion sliders- Cheesy Paneer Sliders

260-280 g paneer

1 tsp Cumin seeds

1/2 medium red onion chopped

2-3 green chilis

1 bell pepper chopped (used half and half)

1 ½ tsp garlic paste

1 tsp ginger paste

1 ½ tbsp tomato paste

1/4 tsp turmeric powder

1/2-1 tsp red chili powder

1/2 tsp cumin powder

1/2-1 tsp coriander powder

1/4 tsp Garam masala

1 tsp Salt as per taste

1/2 tsp Pepper

1/4 tsp Sugar

2 tbsp heavy cream

1 tbsp veg/peanut oil

2 tbsp spicy Maggi-style sauce

3 tbsp Mayonnaise

12 Savory butter slider buns

3/4 cup shredded slaw (cabbage with carrots mix)

6 Mozzarella cheese slices

1/2 medium red Onions sliced

1/4-1/3 cup coriander chutney

1/2 stick of unsalted butter

1/2 tbsp Chaat masala

1 tbsp kalonji (nigella seeds)

1/2 tbsp spicy maggi style sauce

1/2-3/4 tbsp chili flakes

1/2 tsp brown sugar

手順

Paneer Bhurji:

You can make this from before and keep it. It will last well in the fridge for about 2 days.

Put a pan on low-medium heat and add oil.

Once warm add cumin seeds and let it crackle.

Add the chopped onions and green chilis and saute for 3-4 mins till the onions become translucent.

Add the chopped peppers and cook for 3-4 mins till they start to soften.

Add the ginger paste, garlic paste, and tomato paste and cook for 4-5 minutes.

Once the raw flavor of tomato paste is cooked off, add all the spices- cumin, coriander, turmeric, red chili, garam masala, salt, sugar and pepper. Mix it in for 2-3 mins and cook.

Crumble and add the paneer to the Mixture.

Mix it well, cooking for 2-3 mins.

Add the heavy cream and mix well to combine.

Cook everything together till its mixed well for 2-3 mins and the paneer filling is ready.

Let it cool before layering.

Spicy Creamy sauce:

Mix the spicy Maggi sauce, and mayonnaise in a bowl. Keep aside.

Preheat the oven to 350F.

Assembly:

Assemble the buns on a parchment-lined baking tray to make it easier.

Slice slider buns horizontally in half.

On the bottom half of the buns spread the spicy mayo sauce.

Top it with shredded slaw mixture.

Then spread the cooled paneer bhurji over it.

Top a layer of sliced onions.

Layer with the cheese slices over.

Spread coriander chutney on the top part of the slider buns.

Sandwich the slider buns over the cheese slices.

Using a toothpick poke holes in the slider buns. be sure to get all the buns all over.

Butter mixture:

Melt butter and mix chaat masala, kajoni, Maggi sauce, chili flakes, and brown sugar.

Pour the butter mixture over the buns and spread it all over.

Cover the buns with foil and bake for 15 mins 350F and then 15-20 mins at 330F. The base should be slightly crisp.

Let it rest for 3-5 mins once out of the oven.

Remove the foil, cut, and serve.

You can serve these with any condiments you like, but it’s not needed as these are saucy themselves.
