Chicken Fajita Bowl

For the chicken fajitas
500g chicken breast or thigh, sliced thin
1 tbsp olive oil
1 tsp smoked paprika
1 tsp ground cumin
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried oregano
1/2 tsp chilli powder (optional)
Salt & pepper to taste
1/2 lime or lemon juice
Fajita veggies
1 red capsicum (bell pepper), sliced
1 green capsicum, sliced
1 red onion, sliced
Base & toppings
2 cups cooked brown or white rice
1/2 cup canned corn (drained)
1 can black beans or kidney beans (rinsed & drained)
1/2 avocado, sliced (optional)
1/2 cup Greek yoghurt or sour cream
Salsa or hot sauce (optional)
Fresh coriander

Marinate & cook chicken
Mix chicken with spices, olive oil, lime juice, salt & pepper in a bowl. Let sit for 10-15 minutes (or overnight for max flavour)
Heat a large pan over medium-high heat. Cook chicken for 6-8 minutes, until golden and cooked through. Set aside
Sauté the veggies
In the same pan, add a splash of oil if needed
Toss in the sliced onion and capsicums
Cook for 5-7 minutes until slightly softened and charred on the edges, stirring occasionally
Assemble the fajita bowl

Toppings: avocado, yoghurt, salsa, coriander, lime

Meal prep & storage
Store bowls in airtight containers (without avocado or yoghurt) for up to 4 days
Add fresh avocado and yoghurt / sour cream in the day you eat it
Reheat chicken, veggies, rice in microwave (or stovetop if you’re at home)
