Tomato Bisque

1 tbsp olive oil
1 cup diced onion
1/2 cup diced celery
3 cloves garlic
1 quart chicken broth, plus more as needed
1 (28-oz) can crushed San Marzano tomatoes, or about 3 1/2 cups of other crushed tomatoes
1/2 tsp paprika
3 tbsp white long grain rice
1/2 cup heavy cream
1 or 2 tsp suqgar, or to taste
salt and pepper to taste
cayenne to taste
basil to garnish

1. Sweat onion and celery
Add garlic a couple minutes before adding broth
Add broth and crushed tomatoes
On high heat bring to an active simmer
Add salt, pepper, cayenne and paprika
Once at a simmer add rice
Reduce to medium-low heat to maintain active simmer
Simmer for 40 minutes
Reduce heat to low
Check for taste, add salt and sugar to taste
Add to blender
Once blended add cream
