Ingredienti

300 g potatoes (after peeling, cut into smaller chunks)

½ tsp salt

150 g potato starch (or corn starch)

100 g water (100g to 300g water, adjust based on moisture level)

2 tbsp chili powder

1 tbsp sesame seeds

2 tbsp soy sauce

2 tbsp vinegar

1 tbsp oyster sauce

1 tsp sugar

1 tsp chopped cilantro

2 tbsp vegetable oil (hot)

Istruzioni

Peel and cut the potatoes into chunks. Steam or boil until fork-tender.

Smash the steamed potatoes until smooth. You can use a fork or a potato masher.

Add salt and potato starch, mixing well.

Prepare a cup of water, gradually add water to the dough while continuously kneading until the dough becomes smooth and pliable. The dough should be soft enough to roll into a ball without cracks. If cracks appear, it means the dough is too dry - add more water as needed.

Shape the dough into ping-pong-sized balls. With the given ingredients, you should be able to make around 22 to 24 potato balls.

Lightly grease the steamer with oil and arrange the potato balls inside, leaving some space between them as they will grow bigger during steaming. Steam over high heat for 15 minutes.

In a small bowl, combine chili powder, sesame seeds, soy sauce, vinegar, oyster sauce, sugar, and cilantro. Heat 2 tbsp vegetable or peanut oil until hot, then pour it over the mixture to sizzle. Stir well.

Dip the steamed potato balls into the spicy sauce and enjoy warm!
