Chicken Taco Tortilla Cups

Ingredienti

6 tortillas

1 tbsp plain flour

3 tbsp water

Filling:

500g chicken mince

1 sachet Mingle taco seasoning

1 tbsp tomato paste

100ml chicken stock

1 red capsicum, thinly sliced

Topping:

1/2 cup mozzarella

1 tbsp coriander, chopped

Istruzioni

Preheat oven to 180C.

Mix flour and water until smooth.

Make 4 cuts around each tortilla. Brush lightly with the flour mixture, then fold and press into cup shapes to secure the edges.

Place into a greased baking dish.

Heat a large pan over high heat. Cook chicken mince until browned.

Add taco seasoning and tomato paste, stir well.

Pour in chicken stock and add capsicum. Cook until thick and the liquid has absorbed.

Spoon mixture into tortilla cups.

Top with mozzarella.

Bake for 10-15 minutes until cheese is melted and tortilla edges are crisp.

Finish with chopped coriander.
