Cheeseburger Soup

Ingredienti

1/2 lb ground beef

1/2 c chopped onion

3/4 c shredded carrots

3/4 c diced celery

1 tsp dried basil

1 tsp dried parsley

4 tbsp butter, divided

3 c chicken broth

3 c peeled & diced potatoes

1/4 c flour

2 c shredded cheddar

1 1/2 c milk

3/4 tsp salt

1/4 to 1/2 tsp pepper

1/4 c sour cream

Istruzioni

Brown beef, drain & set aside.

Saute onion, carrots, parsley flakes, basil & celery in 1 tbsp butter.

Add broth, potatoes, & beef, cover & simmer until potatoes are tender.

Make roux with remaining butter & flour. Cook & stire for 2 minutes. Reduce heat to low, stir in cheese, milk, salt & pepper. Cook until cheese melts.

Take off heat & blend in sour cream.
