Getting lean before starting long distance training again 🏃🏽♀️

Ingredients (serves 2)

3/4 cup rice (dry)

8 oz lean ground beef (93/7)

2 cloves garlic, minced

1 tsp fresh ginger, grated

Glaze: 1 tbsp gochujang, 1 tbsp soy sauce, 1 tsp honey or premade bulgogi sauce

1 large carrot

2 tbsp rice vinegar + 1 tsp sugar + pinch salt (quick pickle)

1 Persian cucumber, sliced

1/4 cup kimchi

2 scallions, sliced

1 tbsp sesame seeds

2 eggs

Istruzioni

Cook rice. Quick-pickle carrots: toss with rice vinegar, sugar, and salt. Let sit 10+ minutes.

Brown ground beef with garlic and ginger. Drain excess fat.

Mix glaze ingredients, pour over beef and toss. Cook 1 more minute.

Fry two eggs in a lightly sprayed pan (runny yolk recommended).

Divide rice between bowls. Top with beef, pickled carrots, cucumber, kimchi, scallions, fried egg, and sesame seeds.
