Most seed breads use whole flax seeds, but the truth is we can’t really digest them whole, therefore milling them beforehand means we can absorb more of the nutrients they contain!

It’s coeliac friendly, nutrient dense and made entirely from seeds and nuts.

Happy Hormone Bread

This loaf is not only good for your hormones, but is also blood sugar balancing, gluten-free and nutrient dense. It is a nut and seed loaf made without oats, instead using milled flaxseeds to provide a soft crumb and with added benefits. Flaxseeds are the richest source of a a class of plant compounds called lignans. Lignans (often known as phytoestrogens) can dock onto the oestrogen receptors on our cells which may have a balancing effect on our own oestrogen levels.

Ingredients, makes 18 slices

300g milled golden or brown flaxseeds I like @linwoodshealthfoods

2 tablespoons extra virgin olive oil

75g pumpkin seeds

75g sunflower seeds

75g sesame seeds

50g pistachio nuts

50g dried cranberries

35g psyllium husk flakes

1 tsp sea salt

400ml filtered water

1–2 tablespoons mixed seeds, to sprinkle (optional)

Istruzioni

Start by adding the flaxseeds to a food processor, or blender and blending on a high power for around 10-20 seconds until the flaxseeds form a soft flour.

Put all the ingredients into a large bowl and stir thoroughly to incorporate the water. Flaxseeds and psyllium can absorb quite a lot of water so you may need slightly more or slightly less.

Transfer the mixture to a 2lb/900g loaf tin, lined with baking parchment or a loaf tin parchment liner, and flatten the surface using the back of a wet spoon. Sprinkle over extra seeds, if desired. Preheat the oven to 180°C fan.

Bake the loaf for around 1 hour, or until golden and firm to the touch. Allow to cool completely in the tin before slicing.

Storage: Store in an airtight container for up to 5 days. Suitable for freezing. Slice before freezing, separating the slices with small pieces of baking parchment. Defrost individual portions as needed.
