Perfect Divinity Candy

Ingredienti

2 cups sugar

1/2 cup light corn syrup

1/2 cup hot water

1/4 teaspoon salt

2 egg whites

1 teaspoon vanilla

1/2 cup nuts

Istruzioni

In a 2 quart saucepan, combine sugar, syrup, hot water, and salt.

Cook and stir until sugar dissolves. Cook hard ball stage. 250° wipe off crystals with fork and cloth. Be egg whites until stiff and pour syrup over egg whites. Be at high speed for five minutes. Add vanilla and beat until it loses its gloss. Add nuts. Drop from teaspoon on wax paper. If divinity becomes stiff, add a few drops of water.
