Tofu Pasta Sauce

Ingredienti

Sauce:

1 300gr block silken tofu

2/3 cup sun-dried tomatoes

1/2 cup roasted red peppers

3 garlic cloves

A bunch of basil leaves

1/4 cup nutritional yeast

1 tbsp chilli flakes

Salt & pepper to taste

Water to thin (start with 1/4 cup)

Others:

Your favourite pasta

Bunch of broccolini

Istruzioni

���Add all the sauce ingredients into a blender, blend until smooth, taste and adjust flavours if needed, adding more water to achieve desired consistency.

Cook the pasta in salted boiling water according to package instructions, until al dente. Before draining, reserve 1 cup of the pasta water.

���Pour the sauce into a large pan and warm it up over medium heat, stirring occasionally. Add 1/2 cup of the pasta water.

���Add the pasta to the pot and toss to coat. Add a splash of pasta water if needed.

Grill some broccolini and serve over pasta, toss vegan Parmesan cheese and enjoy.
