Save This Recipe for This #glutenfree Haloumi Salad Courtesy

300g halloumi, cubed
2 tbsp hot honey
1 tsp chilli flakes
570g chickpeas
1 tsp paprika
1/2 cucumber, finely chopped
3 beef tomatoes, finely chopped
1/2 red onion, finely chopped
1 yellow pepper, finely chopped
Large handful of coriander, finely chopped
Dressing
Juice of 1 lemon
1 tbsp honey
2 tbsp extra virgin olive oil
Salt and pepper to taste
Istruzioni
Over medium heat some oil in a pan. Once hot, add halloumi, hot honey and chilli flakes. Cook until golden brown, around 5 minutes
Preheat oven to 200c. Rinse and drain chickpeas. Pat dry. Add to a prepared baking tray along with some oil, salt and paprika. Roast for 30 minutes until crispy
Make a dressing by mixing ingredients in a small bowl.
Chop your salad and coriander, and add to a large bowl, along with the halloumi and chickpeas
Pour over the dressing and mix well.
