Creamy Chicken Orzo Soup

Ingredienti

2-3 carrots, peeled and chopped

1 yellow onion, diced

2 tbsp olive oil

3 tbsp flour

3 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

3/4 cup orzo

Italian seasoning, about 1 tbsp

1 1/2 cups shredded chicken

Salt and pepper, to taste

Istruzioni

Peel and chop carrots, dice onion and garlic.

Pour olive oil in your pan and saute onion and carrots until translucent, about 5-7min. Season with salt and pepper.

Add in flour and garlic, stir and cook for about a minute before adding in chicken broth, once liquid is added be sure to scrap the bottom of the pan and stir until mixed well.

Add in your heavy cream, orzo, and Italian seasoning.

Turn heat up to high until it comes to a boil then turn down to a simmer and cover with lid 3/4 way for 10 minutes.

After the 10 minutes add your chicken and give it a good stir. Cover for another 7-10minutes.

Ladle into bowls and top with a little salt and pepper to taste.

Note

Makes about 3 large or 4 small servings.
