Hearty Italian Lentil & Vegetable Soup

1 tablespoon extra virgin olive oil
1 medium onion, finely chopped
3 cloves garlic, crushed
2 teaspoons finely grated fresh ginger
1 teaspoon cumin seeds, crushed lightly
1 serrano chile pepper, finely chopped
1 medium carrot, finely chopped
2 trimmed celery
stalks, finely chopped
2 fresh bay leaves
3 fresh thyme sprigs, plus extra to serve
1¼ cups dried french- style green lentils, rinsed
¼ cup tomato paste
6 cups chicken broth
1½ tablespoons lemon juice
⅓ cup finely grated Parmesan cheese
1 additional serrano chile pepper, thinly sliced
Istruzioni
1. Heat oil in a large saucepan over medium-high heat; cook onion, garlic, ginger, cumin, chile pepper, carrot and celery, stirring, for 10 minutes or until vegetables are softened.
2. Add bay leaves, thyme, lentils, tomato paste and broth, bring to a boil; reduce heat to low. Cook for 20 minutes or until lentils are tender. Stir in juice; season with salt and pepper to taste.
3. Ladle soup into bowis, top with Parmesan cheese and additional chile pepper. Sprinkle with a little extra thyme before serving, if you like.
Note
try this!
You can easily make this soup vegetarian. Sub in vegetable broth and vegetarian cheese.
