Sweet Chilli Chicken & Halloumi Rice

Ingredients (serves 2):
200g cubed chicken breast
Tsp smoked paprika
Tsp italian herb seasoning
1 boil in the bag rice (125g dry weight)
Tsp chopped garlic
1 small red onion chopped
1 small red pepper chopped
50g reduced sugar sweet chilli sauce
150g passata
1 chicken stock cube
100ml water
50g reduced fat halloumi diced
Garlic sauce:
40g fat free greek yoghurt
½ tsp chopped garlic
½ tsp dried parsley
Pinch of salt
Tsp hot water
Istruzioni
Start by seasoning the chicken all over with a tsp smoked paprika, oregano along with salt and pepper to taste.
Bring the rice to boil in a large pan of water. Once cooked, drain.
Next, fry off the chicken until almost cooked (around 6-7 minutes). Then add in the chopped garlic, onion and pepper, frying for a further few minutes.
Add in the sweet chilli sauce, passata, cooked rice, crumbled chicken stock cube and 100 ml water.
Stir everything to combine before adding the remaining tsp of smoked paprika and oregano. Return to heat to thicken.
Whilst the sauce thickens, pan fry the halloumi for 3-4 minutes over medium heat until golden on all sides.
Next, make the garlic sauce with the ingredients listed.
Serve the cooked chicken with the bites of halloumi on top. Drizzle over the garlic and herb sauce before garnishing with fresh parsley.
