Cottage Cheese "Alfredo"

Ingredienti

4 ounces dried fettuccine

1 cup milk

1/2 cup cottage cheese

1/2 cup freshly grated Parmesan cheese

2 teaspoons cornstarch

2 cloves garlic, minced

salt

pepper

1 to 2 tablespoons chopped fresh parsely

Istruzioni

Cook Pasta

Cook pasta according to package directions until just past al dente. Drain pasta, reserving 1 cup of the pasta cooking water.

Blend Sauce

While pasta is cooking, in a blender or food processor, combine milk, cottage cheese, Parmesan cheese, cornstarch and garlic. Cover and blend or process until smooth. Heat a large skillet over medium-low heat. Add cheese mixture and cook until bubbly and slightly thickened, about 5 minutes. Season to taste with salt and pepper.

Assemble

Add cooked pasta to skillet. Toss to coat with sauce, adding pasta cooking water to desired consistency.

Finish and Serve

Sprinkle with parley and/or fresh basil.
