Buttery Nutella Rolled Cookies

Ingredienti

2 large eggs

3/4 cup white sugar

1/4 cup brown sugar

3/4 cup unsalted butter (1.5 sticks)

1 tsp vanilla

1 tbsp milk

2 ½ cups flour

1 tbsp cornstarch

1 tsp baking powder

1/2 tsp salt

Nutella

1/2-1 cup chopped hazelnuts (skins removed*) or other nuts

Istruzioni

Preheat oven to 350°F.

Whisk together eggs, sugars, butter, vanilla and milk.

Mix together dry ingredients and then combine with wet until a soft dough forms (don’t be scared to use your hands). Dough should stick to itself but not to you (if it does, add some flour and work it in).

Roll out dough on generously floured parchment, so it’s 1/8”-1/4” thick.

Spread Nutella on top of the dough, using your hand to evenly disperse the filling. Top with hazelnuts.

Gently roll up the dough - you can use the parchment to help, like in the video.

Cut in half, forming 2 logs. Place the logs next to each other on a baking sheet, gently stretching them as you place them. Cut slits partway through, about 1” wide.

Bake for 30 minutes.

Allow to partially cool. Cut through the slits that are already there to form your cookies.

Top with confectioners sugar.

To roast hazelnuts and remove skins - roast at 350°F for about 10 minutes. Immediately put nuts on a damp kitchen towel and rub vigorously - the skins will easily come off.
